Eggs are collected from the nest boxes every day and candled before packing, so cracked shells, aging air cells, and interior defects never make it past the light. Clean nest boxes and daily pasture time mean our shells start out naturally clean. Following state regulations, each egg is carefully washed and sanitized before being packed into a fresh carton, which goes straight into refrigeration labeled with its collection date. Store eggs can legally be 45+ days old when you buy them; ours are days old, and the carton tells you exactly how many.
